This pasta is produced by the famous Italian Artisan Giacomo Santoleri, who grows this ancient wheat on a small farm on the hilly countryside of Abruzzo Italy. He uses traditional methods and produces his products without the use of pesticides or chemicals.
Pennette are short, pasta tubes with the ends cut on an angle like pen nibs. This cut is smooth, without ridges, and slightly smaller than traditional penne.
