Emmer Wheat "Farro Pasta" - A "fine food" quality pasta made from stone-ground whole organic emmer wheat (Triticum dicoccum).
Emmer Wheat (Triticum dicoccum) is an ancient cereal which had its domestic origins in the Mediterranean basin. Its cultivation arrives until now as a minor and neglected crop and the derived products represent the traditions and customs of many Mediterranean peoples, particularly the Italian.
Prometeo works prevalently this species ("farro" in Italian), with the careful separation of the ancient local varieties from the modern cultivators contributing to safeguard of the precious biodiversity of this species.
The Factory mills the Emmer using a natural stone mill and the whole grain pasta is produced using a low temperature slow drying process resulting in a flavor and texture very particular and unique.
Serving Suggestions: Cook in abundant salted water for approximately 8-10 minutes and then season with delicate condiments to enhance, not cover, the fragrance and taste of the pasta.
