Fire-Roasted Ziti with Sausage

Ingredients

  • 8 oz uncooked ziti or rigatoni (about 3 cups)
  • 1 can (28 oz) Italian diced tomatoes, drained
  • 1 jar (24 oz) fire-roasted tomato and pasta sauce
  • 1 package (16 oz) sausage, sliced
  • 2 cups shredded part-skim mozzarella cheese, divided
  • 1 cup 4% cottage cheese

Method

  • Cook pasta in a Dutch oven according to package directions for al dente; drain and return to pot.
  • Add diced tomatoes, pasta sauce and sausage; heat through over medium heat, stirring occasionally.
  • Stir in 1 cup mozzarella and the cottage cheese.
  • Sprinkle with remaining mozzarella.
  • Cook covered 2–5 minutes, until cheese is melted.
