Hearty Green Lentil & Sausage Stew in Puttanesca Sauce

Ingredients

  • 8 Ceriello Fresh Chicken Sausage
  • 1 tbsp of olive oil
  • 15 oz cooked green lentils, drained
  • 15 oz jar of Ceriello Homemade Puttanesca Sauce
  • 1/2 cup pitted Kalamata olives, halved
  • 4 tbsp capers, drained
  • 1/2 cup fresh basil, chopped, plus extra for garnish
  • Salt and pepper to taste

Method

  • Heat the olive oil in a medium saucepan and add the sausages. Brown the sausages on all sides, around 5 minutes.
  • Add the cooked green lentils and the Ceriello Homemade Puttanesca Sauce. Bring to a gentle simmer, cover, and cook for around 10 minutes.
  • Stir in the halved Kalamata olives, drained capers, and chopped fresh basil.
  • Check that the sausages are cooked through before serving.
  • Serve with mashed potatoes and greens, garnished with extra fresh basil.
