Ingredients
- 2 red peppers, chopped
- 1 tbsp olive oil
- 15 oz jar of Ceriello Homemade Pizza Sauce
- 8 eggs
- Salt and pepper to taste
Method
- In a medium-sized skillet, sauté the chopped red peppers in the olive oil for about 10 minutes, until soft and slightly charred.
- Pour in the Ceriello Homemade Pizza Sauce and stir to combine. Bring to a gentle simmer.
- Spread the sauce evenly in the pan, then crack in the 8 eggs. The egg whites will begin to set from the heat beneath the pan.
- Preheat your grill (broiler) to high and transfer the skillet under it for a few minutes to finish cooking the eggs, aiming for fully set whites and slightly runny yolks.
- Serve the skillet with fresh crusty bread for dipping.
