Classic Ratatouille with Basil Sauce

Ingredients

  • 1 tbsp of olive oil
  • 2 zucchinis, chopped into 1 inch cubes
  • 2 red peppers, chopped into 1 inch cubes
  • 1 eggplant, chopped into 1 inch cubes
  • 15 oz jar of Ceriello Homemade Basil Sauce
  • Salt and pepper to taste

Method

  • In a large saucepan on a medium heat add the olive oil. Add the chopped zucchinis, red peppers and eggplant.
  • Stir everything around and allow the vegetables to brown on the outside. This will typically take 10–15 minutes.
  • Once the vegetables are around 80% cooked, add the Ceriello Homemade Basil Sauce.
  • Simmer the flavours together for around 5–10 minutes and then serve. This works well as a tasty main dish or as a side, paired with something like a lemon-grilled salmon fillet.
